    Spey Chairman's Choice

    John and Robert Harvey started the business in 1770 and it was on Christmas Day in 1787 that John Harvey (acting in his capacity as chairman of the company) personally selected  the whisky to be used only by family, John Harvey called this exclusive and secret family whisky Spey "Chairman's Choice". The quantity he chose was very limited and was soon all consumed by the following June, however he deemed that everyone must wait until the next Christmas day for the following Spey Chairmans Choice. Thus commenced an annual Christmas day family tradition which is continued to this very day. The whisky is usually an average age of 17 years old.

    This Tomatin is part of their new Five Virtues Series which the distillery explain 'The Five Virtues - Wood, Fire, Earth, Metal and Water - is a concept synonymous with the age-old processes and materials employed by our distillery men. Water feeds wood; wood sustains fire; fire gives life to earth; earth yields metal; metal gathers water; and the cycle continues .... This bottling of Water, the fifth virtue, is represented by naturally pure and soft water from the Alt-Na-Frith burn. Drawn year-round, this is our private water source running right through the distillery grounds. This edition deliberately employs winter distilled spirit, where reduced contact with our copper stills enriches the final flavour' It is a combination of 50% Sherry butts 50% 2nd fill ex-Bourbon barrels

With only 2012 bottles being made, the liquid has been specially chosen for the months it was drawn from the casks, 6th February, the Queen' accession, and the first week in June, traditionally when the Jubilees are celebrated.     Springbank 25 Years Old 2018 Edition

    The distillery tell us that "The Springbank 25 Years Old marks a celebration of true Victorian whisky production at Scotland's most traditional distillery. Long established production techniques together with the knowledge and experience of our craftsmen are used to malt barley on traditional malting floors and distil this most handcrafted of spirits." This version departs from recent editions of the 25yo where maturation combined bourbon and sherry casks into a final port pipe vatting, whereas this edition has been matured exclusively in refill sherry casks.

    Wolfburn Northland

    Wolfburn is the most northerly whisky distillery on the Scottish mainland. Wolfburn's smooth and warming flavour stems from the unhurried way in which the spirit is made. "On the nose you'll find fruit and malty aromas, with just a hint of peat.
