Lindores Abbey tell us a bit about this Aqua Vitae 'Aqua Vitae, a multi award winning handcrafted botanical spirit, is made on site using spices, dried fruit and locally grown green herbs such as Douglas fir and sweet cicely. With citrus notes and full of sweet and spiced flavours, it is delicious as a mixed drink or a cocktail base. The earliest Aqua Vitae was made at Lindores as long ago as 1494, and we’ve authentically recreated that recipe and reimagined it as an inquisitively versatile spirit. Today, our own spirit is distilled in pot stills and then infused with a blend of spices and herbs which grow in our gardens, amidst the grounds of the ancient Abbey. It is entirely natural, with no added sugars.
: Initial light top notes of peach and pear, give way to hints of ginger, clove and cinnamon spice. Rich, caramel sweetness and some lovely light herbal notes on the finish. Complex and rewarding.
We recommend drinking pouring 50ml of Aqua Vitae over ice in a Highball glass, topped with Ginger Ale, and garnish with a twist of Orange.'

This is the core range bottling from Lindores Abbey Distillery.
The distillery has one of the longest wash fermentation periods in the Scotch Whisky Industry. Coupled with an unusual sister spirit stills, this set up helps to achieve the Distillery Manager's, Garry Haggart's, goal of producing a malt of remarkable character for its age. The Sister Spirit Stills “Poppy” & “Gee”, named after the owner's, Drew and Helens’, two daughters, help enhance and refine, through additional copper contact in the spirit distillation phase. The intention is to maintain the flavours captured in the long fermentation period.

Lindores Abbey tell us a bit about their New Make Spirit 'We increased our fermentations to 114 hours to bring out that added tropical fruitiness. We stopped the wash still at first sign of frothing, let it rest and then slowly brought the heat back into the still. We ran the spirit during the cut on the spirit stills very, very slowly, and we also cut in high at 75-76% and came down to 66%. Interestingly at around 68-69% on the cut, the spirit has an amazing caramel and butterscotch nose with others picking up peaches and strawberries.
The final spirit is robust, complex, and interesting and that’s exactly what we hoped it would be.
: We had been through four seasons of distillation at Lindores and had worked with the distillery to define the spirit. We had a direction, but the distillery decided to offer us up a new intriguing spirit instead. A complex array of aromas, cherries, pear drops, apple pie and banana. We went from nutty, to cereal, to malty, to pears, to fruity and to finally a spirit which combines all of these and more. There is also a sweetness and a spiciness with an incredible mouth feel. '
