The Marsala Superiore Ambra Secco casks imbue the delicate, herbal character of AULTMORE with notes of walnuts, mandarin, and figs roasted in honey. 
Balblair describe this 15 Years Old which is part of their new range as 'Tropical and mature, with the texture of melted chocolate and one of the finest finishes a single malt can bring, this stunning whisky calls for quiet admiration. Round and velvety, yet developed and fresh. Smoothed over by time, but with a beating heart.' It has been matured initially in bourbon casks followed by first fill Spanish oak butts.
Part of the Flora & Fauna Series, the Benrinnes 15 Years Old is described as a rounded and mellow single malt. 
The distillery says 'our 15 Years Old single malt whisky gives cracked pepper, charred oak, apples, dark chocolate and forest fruits with rich sherry notes and a touch of smoke.' It has been matured in 80% First Fill Ex-Bourbon & 20% First Fill Ex Sherry Cask for 9 years then the final 6-year maturation for both liquids combined in an Oloroso Cask.

The Distillery says 'Glen Moray 15 Years Old combines the sweet vanilla flavours from American oak casks with the rich dried fruits and dark chocolate characteristics derived from Spanish sherry casks. The result is an exquisitely rich and balanced whisky.'

It has been gently matured in our finest American oak barrels giving a gentle vanilla oak character, interwoven with the subtle notes of sea spray and spicy aromatic fruits on the nose. Master Distiller Billy Walker describes this 15 Years Old as 'the perfect representation of the distillery’s DNA. He believes the 15 year old is an exceptional balance of the distillery’s spirit and the influence of the Sherry casks used during maturation.' Pedro Ximenez and Oloroso puncheons and hogsheads – were used during maturation to deliver complete depth and finish.
The distillery say "This expression has been bottled at 46% to retain the whisky's unique and natural characteristics and subtlety of taste. It is non chill-filtered and no caramel colouring has been added."

The Glenfarclas 15 Years Old is more complex than the younger whiskies. Lots of body, superb balance of sherry and malt. Long lasting and a distinguished finish.
