Today, Craigellachie still use old fashioned worm tubs to cool the spirit and bestow it with extra flavour, creating a dram to rival whiskies twice it's age.
Today, Craigellachie still use old fashioned worm tubs to cool the spirit and bestow it with extra flavour, creating a dram to rival whiskies twice it's age.
Initially matured in a mixture of ex-Bourbon and ex-Sherry casks. 50% of the 'blend' is then finished in first-fill Sherry casks, the rest in first-fill Bourbon. Craigellachie 17 is smooth and mellow, the aroma opens with vanilla and rich, silky notes of exotic fruits, canned pineapples and a hint of smoky liquorice.
The distillery tell us this is "An incredibly rare expression of Craigellachie that has more biscuity sweet intensity and a bolder pineapple note compared to the 17 year old. This is the bottle that Craigellachie fans seek out. After an initial maturation on a combination of cask types, half of the vatting goes into first fill sherry casks and half goes into first fill bourbon casks to give an intense and bold example of 'The Rock of Speyside'."
The distillery says: "Craigellachie is an unapologetic and distinct whisky, robust and muscular in flavour with a hint of pineapple. Matured in first-fill ex-Bourbon casks which bring vanilla, toffee and fudge notes, and first fill ex-Sherry casks providing richness and complexity, the extra years resting in oak allows for further flavor development in the 23 Year Old. Vanilla moves to the palate, spices and menthol notes emerge and charred pineapple intensifies."
