For one week every year The Balvenie run heavily peated barley through their whisky making process to create a different Balvenie style similar to that of 50 years ago. This has been matured exclusively in American oak casks for 14 years and is 30ppm and is from the 2003 run.

Balvenie The Sweet Toast of American Oak 12 Years Old

The distillery says - "Inspired to produce an even fruitier, sweeter Balvenie, Apprentice Malt Master Kelsey McKechnie had the bright idea to import Virgin Oak barrels from Kentucky. After deep toasting them at The Balvenie Cooperage they were filled with Balvenie aged in ex-bourbon barrels. The result is a delectably complex whisky with notes of candied fruit, coconut and delicate vanilla."

Balvenie The Week of Peat 14 Years Old

The distillery says - "Eager to experiment with The Balvenie profile using what he had learnt from a recent trip to Islay, distillery manager Ian Millar ordered a batch of Speyside peat for the kiln. For a week a year, The Balvenie distills a batch of peated malt, resulting in a whisky rich in honey, vanilla and citrus notes with an extra layer of delicate smokiness.

The 15 Years Old follows on from the 10.  The longer maturation softens it's smokiness to hints of charred oak while developing the wood-imbued character. Bourbon casks cultivate the sweetness vanilla pods and honey while sherry casks impart rich fruity notes.

Bruichladdich Octomore 09.3 5 Years Old Dialoyos

The distillery tell us:
OCTOMORE 09.3 Dialoyos is malted to 133PPM and distilled from 100% Islay grown Concerto barley, harvested in 2011 from Irene’s Field, Octomore Farm and distilled in 2012. It was matured entirely on Islay in a combination of ex American whiskey and French wine casks. It has been aged 5 years in 1st fill ex-American (25%), 3rd fill virgin oak (25%), 2nd fill Rivesaltes (20%), 2nd fill Syrah (20%), 2nd fill bourbon (10%). Bottled unchill-filtered and colouring free at Bruichladdich Distillery, 62.9% alc. / vol. Limited to 18,000 bottles.
