Tasting Notes
Nose |
S.C: Slightly meaty and also rather sweet. Faint herbals (sage and thyme in particular) and a fair bit of alcohol. Green notes suggest wet leaves and a fair bit of oak shavings. Slightly sweeter with time. Honey and something like mulled mead also emerges. |
Taste |
S.C: Slight sweetness and a savoury meatiness alongside a certain citrusy note. Clean and pleasant, with the herbs transferring onto the palate. Slightly beer-ish, with more honey and mead notes coming through with barley sugar and the typical wood spice. |
Finish |
S.C: Relatively medium on the finish, with the sweetness from the various sources mingling well with the wood spices, herbs and meaty notes. Quite drying and with lingering oaky notes. |
