Distillery: Fresh, breezy start suggestive of a beach explorers rock pool, with its seaweed and shellfish. The peat smoke opens softly with herbal, aromatic notes of lemon thyme and lilac. Add water and those seaside aromas evolve to evoke seafood; razor clams, maybe or sweet crab meat. |

Distillery: The palate is oily and enthralling, first with bags of peat smoke and a wonderful maritime saltiness, peppery spiciness, oaky dryness and herbal peat smoke ensues. |

Distillery: The long bitter sweet finish is laced with more charred lemons and cacao, and is still powerfully smoky. |
