This Glen Scotia is finished in first-fill American Oak ex-Bourbon barrels and ex-Pedro Ximenez sherry casks.

For Batch Three of the Glenallachie Virgin Oak Series, they first matured the whisky in American Oak (Quercus Alba) Ex-Bourbon Barrels. To add a delicate and distinctive twist, the whisky then underwent additional maturation for approximately 18 months in specially selected Spanish virgin oak casks. This rich bronze malt attains its spicy, treacly flavours from hogsheads made of Spanish Oak (Quercus Robur) sourced from Galicia and Asturias regions, in particular the Cantabrian Mountains which have a cooler climate and greater humidity. Before being filled, the wood is air dried for around 18 months, opening up the oak for the Glenallachie spirit to extract the cask character.
For Batch Three of the Glenallachie Virgin Oak Series, they first matured this whisky in American Oak (Quercus Alba) Ex-Bourbon Barrels. To add a delicate and distinctive twist, the whisky then underwent additional maturation for approximately 18 months in specially selected Hungarian virgin oak casks (Quercus Petraea), from the mountains of northeast Hungary's Zemplen Forest. It's rocky volcanic soil, along with its colder climate and higher altitude means that the trees in this region grow very slowly, giving the oak a tight grain. The barrels were then toasted and charred to a medium level.
For Batch 3 in the GlenAllachie Virgin Oak Series, the distillery have first matured the whisky in American Oak (Quercus Alba) Ex-Bourbon Barrels. The whisky then undergoes additional maturation for approximately 18 months in specially selected Virgin Scottish Oak Casks. It is a limited release. This very rare malt obtains its sophisticated flavours from casks made of Scottish Sessile Oak (Quercus Petraea) sourced from the Atlantic coast of Scotland. Scottish oak is incredibly challenging to work with at all stages of production; growing, milling and coopering. Its rarity, costliness and tendency to knot mean it is scarcely used for whisky maturation. Before being filled, the wood was air dried for 36 months, then toasted and charred to a medium level. Using just a handful of casks, the resulting spirit delivers a truly exceptional drinking experience, oozing with blonde chocolate with hints of zesty orange and smooth toffee.
The distillery says: "Beginning its life as a Fino, Amontillado Sherry undergoes an additional maturation period without a ‘flor’ layer. This stage of oxidative ageing develops a richer colour and more robust characteristics. Using hogsheads that previously held this well-aged style
of Sherry, the subsequent single malt brims with dark cherries, toasted hazelnuts and caramel sauce. We proudly present The Wood Collection at a high strength of 48% ABV, natural colour and non-chill filtered, allowing each unique spirit to speak for itself."

Subsequently, the whisky underwent additional maturation for over two years in wine barriques skilfully sourced by Master Distiller Billy Walker, imparting a distinctive twist onto the GlenAllachie spirit.

The barriques selected have imparted richness of both colour and flavour to our Speyside malt, offering decadent layers of dried stone fruits and delicate hints of warming spice."
The distillery says: "Known for its pale appearance and delicate flavour profile, Fino is the driest style of Sherry. It must be biologically aged for at least two years under a ‘flor’: a yeast layer which prevents oxidation. Maturation in former Fino hogshead casks has resulted in a single malt bursting with stewed pear, sugared almonds and vanilla custard tones. The distillery say "This expression is a limited edition of 3,042 bottles and has been specially created by our Master Distiller. From Glencadam's historic dunnage warehouses, he has carefully selected single malt distilled in 2008 and matured initially in exceptional ex bourbon American oak casks. The single malt is these casks has been expertly married then finished in the finest Sauternes wine barrels sourced from France."
The distillery say "This Glencadam American Oak Reserve has been specially created by our Master Distiller. He hand-selected the very finest bourbon barrels made from American oak in Kentucky. These barrels were then shipped to Scotland, filled with new make Glencadam spirit, and carefully placed in Glencadam’s historic dunnage warehouses to be left to silently mature. After a number of years, our Master Distiller carefully selected the very best barrels to be bottled as Glencadam American Oak Reserve Single Malt Scotch Whisky."
