The distillery says: "Beginning its life as a Fino, Amontillado Sherry undergoes an additional maturation period without a ‘flor’ layer. This stage of oxidative ageing develops a richer colour and more robust characteristics. Using hogsheads that previously held this well-aged style
of Sherry, the subsequent single malt brims with dark cherries, toasted hazelnuts and caramel sauce. We proudly present The Wood Collection at a high strength of 48% ABV, natural colour and non-chill filtered, allowing each unique spirit to speak for itself."

The distillery says: "To craft The GlenAllachie Wine Series, we first expertly matured our spirit in American oak ex-Bourbon barrels. Subsequently, the whisky underwent additional maturation for over two years in wine barriques skilfully sourced by Master Distiller Billy Walker, imparting a distinctive twist onto the GlenAllachie spirit.
Located in the heart of Portugal, the Douro Valley is one of the world’s oldest protected wine regions, established in 1756. With the country’s highest wine classification as a Denominação de Origem Controlada (DOC), this historic region is a significant producer of robust, characterful red wines. The barriques selected have imparted richness of both colour and flavour to our Speyside malt, offering decadent layers of dried stone fruits and delicate hints of warming spice."
The distillery says: "Known for its pale appearance and delicate flavour profile, Fino is the driest style of Sherry. It must be biologically aged for at least two years under a ‘flor’: a yeast layer which prevents oxidation. Maturation in former Fino hogshead casks has resulted in a single malt bursting with stewed pear, sugared almonds and vanilla custard tones. The distillery says: "Subjected to extensive ageing without a ‘flor’ yeast layer, Oloroso, which roughly translates to ‘fragrant’, is the darkest dry Sherry style renowned for its pronounced
nutty, dried fruit qualities. Maturation in well-seasoned Oloroso butts has delivered bold layers of coffee beans, sticky raisins, stem ginger and figs that all work in tandem with The GlenAllachie’s honey-rich house style. We proudly present The Wood Collection at a high
strength of 48% ABV, natural colour and non-chill filtered, allowing each unique spirit to speak for itself."
The distillery says "This Is the first time that we have experimented with Pomerol casks in our cask exploration series. Pomerol is home to some of the finest and most sought-after red wines in the world and is the smallest of all the major Bordeaux wine appellations. The Versatile Port Charlotte spirit has been profoundly influenced by the flavour of the oak, with notes of black cherry, plum and aged leather."
This single malt was matured in first fill bourbon barrels in 2013 and matured for 4 years. In 2017, the spirit was re-casked into Pomerol casks and matured for the next 5 years. Phenol levels 40PPM
